I recently met the duo responsible for a great Catering company in NY and decided to share their great story!
Chef Xarles Thomson was born in Lima, Peru in 1981; in a home in which the kitchen was an essential part of their living.
Due to the difficulties that the country faced, Peru was in the middle of a Civil War, it was difficult to leave the house and Chef Thomson as a child was always in the kitchen observing how the cooks in the home created dishes with their Afro-Peruvian and Andean influences.
He would watch them cook in copper and clay pots, which are the best conductors of heat, while they prepared succulent stews and dishes.
The scents and flavors became engraved in him from that moment.
And that was the beginning of a passion that became a profession.
After working with Michelin Starred Chefs around the Globe, in restaurants like D.O.M. in São Paulo, Brazil (#4 Best Restaurant in the World), Panca (1st Peruvian Michelin Starred restaurant in NY) and Pio Pio (also in NY), Chef Thomson now runs his own Catering Company!
His company is called Hamar Catering, where he blends Peruvian, Asian and European flavors to conceive unique dishes!
They organize and cater private dinner parties, to bigger events up with 300 people!
